What's a Liege Waffle?
Smaller than the rectangular Brussels waffle (or Belgian waffle, as we know it in the US), Liege waffles are known for their brioche-like yeast dough studded with pearl sugar and their distinct rustic shape. These hand-held waffles are chewy soft on the inside while crispy on the outside.

About Us
Family Owned & Operated
My wife Alicia and I are very proud parents of three boys. Twins, Riley and Jack, and younger brother…only in age, Luke.
In 2020, we enjoyed lots of time together as a family, and, like many of us, we got to thinking. We truly enjoy being with each other. We love our community, Niantic, and we like to have fun as a family.
So, we decided to start “our own” thing…in Niantic, together, as a family.
We wanted to do something that was not the usual, made others happy and was a break from the everyday.
On the slopes of Vermont, we learned of a Belgian dessert that made everyone smile. The Chocolate Drizzled Liege Waffle. Made from imported pearl sugar, wholesome, real ingredients, and cooked to perfection in heavy duty cast iron waffle makers, this unique treat is sure to bring a smile to everyone's face!
And so it was decided...why not deliver happiness, why not a food truck, Why Not Waffles!
The Walsh Waffle Wagon Gives Back
Volunteering and giving back is important to us.
In 2021,the Walsh Waffle Wagon was honored to give to:
- East Lyme High School Soccer Team
- East Lyme High School Football Team
- East Lyme High School Key Club
- StarstoStem.org.
- East Lyme Senior Center
- East Lyme High School Safe-Grad Party
- The Brian Dagle Foundation.
In 2022, the Walsh Waffle Wagon:
- Hosted a free of charge event to support the Fostering Family Hope Organization
- Participated in the CT National Guard Suicide Prevention 5K
- Gave to the Connecticut Cancer Foundation
- Gave over $1,500 in proceeds to the Miracle League Foundation of Southeastern CT.
- Gave all proceeds from the Jingle Bell 5K to the Brian Dagle Foundation
In 2023, The Walsh Waffle Wagon:
- Attended and gave all proceeds from Laps For Lucy 5K and fun run to the Cystic Fibrosis Foundation.
- Provided 2 hours of free of charge services in support of Fostering Family Hope
- Contributed all proceeds from the Brian Dagle Foundation, Jingle Bell 5k back to the foundation
In 2024 The Walsh Waffle Wagon:
- Supported the Seniors of the East Lyme High School Lacrosse team with a free post senior day game party
- Contributed all proceeds from the Brian Dagle Foundation, Jingle Bell 5k back to the foundation
We will continue to volunteer and give back to our community and appreciate your ongoing support!
